Ingredients
For the Blue Spirulina Pancakes
-
250 g all-purpose flour
-
2 tablespoons granulated sugar
-
2 teaspoons baking powder
-
½ teaspoon baking soda
-
¼ teaspoon salt
-
2 large eggs
-
300 ml milk
-
50 g unsalted butter, melted
-
1 teaspoon vanilla extract
-
1–2 teaspoons The Organic Labs Blue Spirulina Powder
-
1 teaspoon lemon juice
-
Butter or neutral oil for cooking
For the Toppings
-
150 ml heavy whipping cream
-
1 tablespoon powdered sugar
-
150 g fresh blueberries
-
4 tablespoons maple syrup
-
Optional: sliced banana, coconut flakes or additional fresh berries
Instructions
Step 1: Prepare the Dry Ingredients
-
In a large mixing bowl, combine the flour, sugar, baking powder, baking soda and salt.
-
Whisk thoroughly to distribute the ingredients evenly.
-
Set aside while preparing the wet ingredients.
Step 2: Prepare the Blue Spirulina Mixture
-
In a small bowl, combine 1 teaspoon of Blue Spirulina Powder with 2 tablespoons of milk taken from the measured quantity.
-
Stir until smooth, ensuring there are no lumps.
-
For a stronger blue colour, gradually add another teaspoon of Blue Spirulina Powder.
-
Set aside.
Step 3: Make the Pancake Batter
-
In a separate bowl, whisk together the eggs, remaining milk, melted butter and vanilla extract.
-
Add the prepared blue spirulina mixture and stir until evenly coloured.
-
Pour the wet ingredients into the bowl containing the dry ingredients.
-
Gently fold everything together until just combined. A few small lumps are perfectly fine.
-
Add the lemon juice and gently stir.
-
Allow the batter to rest for 5 minutes before cooking.
Step 4: Cook the Blue Pancakes
-
Heat a non-stick frying pan over low to medium-low heat.
-
Lightly grease the pan with butter or neutral oil.
-
Pour approximately 60 ml of pancake batter into the pan for each pancake.
-
Cook gently for 2–3 minutes, until small bubbles appear on the surface and the edges begin to set.
-
Carefully flip and cook for another 1–2 minutes until cooked through.
-
Avoid excessive heat to help preserve the beautiful blue colour of the spirulina.
-
Repeat with the remaining batter, stacking the pancakes on a serving plate.
Step 5: Prepare the Whipped Cream
-
Pour the cold whipping cream into a mixing bowl.
-
Add the powdered sugar.
-
Whip until soft, fluffy peaks form.
-
Refrigerate until ready to serve.
Step 6: Assemble & Serve
-
Stack 3–4 blue spirulina pancakes on each serving plate.
-
Add a generous spoonful of freshly whipped cream on top.
-
Decorate with fresh blueberries.
-
Drizzle maple syrup over the pancakes, allowing it to flow down the sides.
-
Add optional banana slices, coconut flakes or additional berries.
-
Serve immediately while the pancakes are warm.
