How to use
How to use prickly pear powder
The classic: an iced prickly pear latte in 4 steps.
- 1Whisk 3–5 g into a pasteUse a splash of warm water or milk and whisk until smooth, with no specks.
- 2Sweeten if you likeA little vanilla syrup or honey rounds out the fruit flavour.
- 3Add cold milkStir in cold milk to make 300 ml. Dairy and oat milk both work well.
- 4Pour over iceServe straight away. Iced, the pink shows clearly and the fruit tastes fresher.
How much to use
| Recipe | Amount | Tip |
|---|---|---|
| Latte, hot or iced, 300 ml | 3–5 g | Whisk into a paste first |
| Bubble tea, 1 serving | 3–5 g | Blend into the milk base |
| Smoothie or bowl, 1 portion | 1–2 tsp | Blend with the fruit |
| Cake batter, 1 standard cake | 1–2 tbsp | Add a little extra liquid |
| Buttercream or frosting, 100 g | 3–6 g | Sift in with the icing sugar |
| Ice cream or gelato, 1 kg base | 20–40 g | Mix with the sugar first |
Starting points: colour shows before flavour, so add more in small steps until you taste the fruit.
Tip: Long baking and a lot of bicarbonate of soda soften the pink. For the brightest colour, use it in cold drinks, frostings, glazes and ice cream.
