About the powder

What is prickly pear powder?

Prickly pear is the fruit of Opuntia ficus-indica, a cactus built from flat, oval pads. It comes from Mexico, where the fruit is called tuna, and now grows around the Mediterranean and in warm, dry regions worldwide. Under a rind set with fine bristles, the flesh can be green, yellow, orange, red or deep magenta.

The magenta colour comes from betalains, the pigment family that also colours beetroot and red dragon fruit. Dried and ground, the fruit keeps its pink and its mild, fruity flavour in a form that is easy to store and measure all year. It suits lattes, lemonades, frostings, ice cream and other recipes that welcome a light fruit note.

What is the difference between prickly pear and pink pitaya powder?

Both are pink cactus fruit powders coloured by betalains. Prickly pear comes from Opuntia ficus-indica and tastes fruitier and slightly tangy; pink pitaya (red dragon fruit) is milder and is often chosen mainly for colour.

Can prickly pear powder be used in baking?

Yes. Start at 3–6% of flour weight in cakes and add a little extra liquid. Heat softens the pink, so the colour is brightest in shorter bakes and in frostings, glazes and fillings.

How much prickly pear powder do you use in gelato?

Start at 2–4% of the base. Dry-blend the powder with the sugar, whisk it into the base, let it rest and judge colour and flavour after freezing, as frozen gelato looks paler than the mix.
