About the powder

What is strawberry powder?

Strawberry powder is the garden strawberry, Fragaria × ananassa, in dry form. The garden strawberry is a hybrid of two wild American species, first bred in France in the 18th century, and is now grown in temperate regions around the world, including much of Europe. Its red colour comes from anthocyanins, natural pigments also found in raspberries and blackcurrants.

Fresh strawberries are mostly water, which makes them hard to use in frostings, chocolate or dry mixes. Freeze-dried and milled, the fruit adds strawberry flavour and a pink colour without the extra liquid, so buttercream stays firm and macaron shells stay dry.

How to use strawberry powder

The classic: a strawberry milkshake in 4 steps.

  1. 1Pour in cold milk300 ml cold milk or a plant drink in the blender.
  2. 2Add 1–2 tbsp strawberry powder1 tbsp for a light flavour, 2 tbsp for a stronger strawberry taste and deeper pink.
  3. 3Add ice cream or banana2 scoops of vanilla ice cream, or 1 frozen banana for a lighter shake.
  4. 4Blend and serveBlend until smooth and frothy. Taste, and add a little sugar or honey if you like it sweeter.

How much to use

RecipeAmountTip
Smoothie or smoothie bowl1–2 tbspBlend with frozen fruit
Milkshake, 300 ml1–2 tbspBlend with milk and ice cream
Strawberry milk, 300 ml1–2 tbspWhisk into a little milk first
Yoghurt or overnight oats, 1 bowl1–2 tspStir in and leave for 5 minutes
Cake batter, per 200 g flour2–3 tbspSift in with the flour
Buttercream or filling, 200 g1–2 tbspSift with the icing sugar
Ice cream, per 500 ml base3–4 tbspBlend with the sugar first

Starting points: flavour and shade depend on the base and recipe. Add a little more for a stronger taste.

Tip: Sift the powder before use so it mixes in without lumps. Baking soda and long baking dull the pink, so for the brightest colour use it in frostings, cream, drinks and ice cream.

FAQ

Strawberry powder FAQ

Can’t find your answer? Email info@theorganiclabs.com.

What does strawberry powder taste like?

Sweet and fruity with a light tartness, like concentrated strawberry. In drinks, yoghurt and frostings you taste it clearly; in baked sponges the flavour is milder.

How do I use strawberry powder?

Blend it into smoothies and milkshakes, stir it into yoghurt, porridge and overnight oats, or sift it into frostings, whipped cream, chocolate and ice cream bases. It adds strawberry flavour and a pink colour without the water of fresh fruit.

Can I bake with strawberry powder?

Yes. Sift 2–3 tbsp per 200 g flour in with the dry ingredients. Baking soda and long baking dull the pink, so the crumb turns a soft pink-beige; for the strongest colour, use it in the frosting or filling.

How do I make strawberry milk with strawberry powder?

Whisk 1–2 tbsp into a splash of milk until smooth, then top up to 300 ml with cold milk. Add a little sugar if you like it sweeter.

Can I use strawberry powder in macarons?

Yes. Sift 1–2 tsp with the almond flour and icing sugar for strawberry-flavoured, pale pink shells. Because the powder is dry, it flavours and colours the shells without loosening the meringue.

How do I stop strawberry powder from clumping?

Fruit powders take up moisture from the air. Close the pack well after use, use a dry spoon, and sift the powder before mixing it into frostings or batters.

Where do you ship from?

From Sweden. Orders placed by 14:00 ship the same day, and delivery takes 1–3 days in Sweden and 3–6 days in the EU. Shipping is free on retail packs over €75.
