What is butterfly pea powder 70g?

Butterfly pea powder is the dried, finely milled flower of Clitoria ternatea, a climbing vine of the pea family with intensely blue petals. The plant grows in warm, tropical climates and is best known in Southeast Asia, where its flowers have long been used to colour drinks, rice dishes and sweets.

The blue comes from anthocyanins, natural plant pigments that respond to acidity: neutral liquids stay blue, lemon or lime turns them purple to pink, and baking soda pushes them towards teal. As a powder, the flower is easy to dose into lattes, lemonades, batters, creams and ice cream, and its very mild taste leaves the flavour to the other ingredients.

The classic: a blue latte in 4 steps.

  1. 1Add ½–2 tsp to a mug½ tsp gives a pastel blue, 1–2 tsp a deep indigo.
  2. 2Whisk with warm waterAdd a splash of warm water and whisk until smooth, with no dry lumps.
  3. 3Top up with steamed milkDairy, oat or coconut milk all work; give it a stir before drinking.
  4. 4Sweeten, but skip the lemonVanilla, honey or coconut syrup suit it; acid would curdle the milk.
