Start With the Application
Before comparing suppliers, define what the matcha is for. The right powder for whisked matcha served with water is not necessarily right for a latte, a sponge or a gelato. Write down:
- the products you will make and the dose per serving or per kilo
- how important colour is in the finished product
- whether the product is heated, frozen or stored for a long time
- your expected monthly and annual volume
With those answers on paper, it becomes much easier to judge samples and compare quotes like for like.
What to Check Before Buying Matcha
Plant and ingredients
Matcha is milled green tea from Camellia sinensis. For professional recipes, look for a single-ingredient powder. Latte mixes containing sugar, milk powder or flavourings are a different product and should be labelled as one.
Colour and fineness
Compare the dry powder in daylight against a reference sample. A clear, bright green and a silky, very fine texture point to properly shaded and milled leaf. Then compare it again in your own product, which is the result that counts.
Flavour
Whisk a small amount in warm water and taste it. Expect vegetal, savoury notes, mild sweetness and a gentle bitterness. A harsh, hay-like or flat taste suggests old powder or a different raw material.
Documentation
Ask for a certificate of analysis for the batch you will receive, a technical data sheet and an ingredient and allergen declaration. Notice how quickly they arrive: slow paperwork delays launches.
Packaging, storage and shelf life
Matcha should be packed to keep out light, air and moisture. Check the recommended storage conditions and shelf life, and plan order sizes so that opened packs are used while still fresh.
Supply and logistics
Ask where the stock is held, whether the supplier can commit to recurring volumes and what payment terms are available. A supplier that already holds stock in Europe saves you the import paperwork.

Working Out How Much You Need
A quick calculation helps you choose the right order size. Multiply the dose per serving by the number of servings you expect to sell. A café selling 50 matcha lattes a day at 4 g each uses about 200 g a day, or around 6 kg a month. A bakery making 40 sponges a week with 15 g of matcha in each uses 600 g a week.
Compare that figure with the pack sizes on offer and with the shelf life of the product. Once a pack is opened, reseal it after every use and decant a working amount into a smaller airtight container, so the main pack is opened as rarely as possible and stays fresh until the last scoop.
