Check What the Powder Is Made From

Start with identity. Prickly pear powder should be made from the fruit of Opuntia ficus-indica. Look for the botanical name on the specification and make sure it is the fruit that has been used. Powders made from the cactus pads, often sold as nopal or simply cactus powder, are green and taste completely different.

Then read the ingredient list. A single-ingredient powder lists prickly pear and nothing else. Drink mixes and prickly pear flavoured powders may contain sugar, milk powder, maltodextrin, flavourings or added colours. They have their place, but they behave differently in recipes and change the ingredient list on your own product.

Judge Colour and Taste in Use

The colour of a dry powder in a bag is a poor guide to how a drink or cake will look. Mix a sample into the milk, batter or base you actually use and look at it in daylight. A good prickly pear powder gives a clear pink and a mild, fruity, slightly tangy taste, without stale, burnt or fermented notes.

Check how it disperses as well. A fine powder should whisk smoothly into a little warm liquid and then into the rest of the drink, without gritty specks or stubborn lumps.

Ask for Documentation

For a business, documents are part of the product. Ask any supplier for:

  • a certificate of analysis for the batch you will receive;
  • a technical data sheet with the full specification;
  • an ingredient and allergen declaration for your labelling;
  • storage conditions and shelf life.
