Vegan Banana Pancake Stack

/ 2 portions - 14 pancakes/

Ingredients

For pancakes:

  • 120 g flour
  • one banana
  • 50 ml of sparkling water
  • 90 ml dairy free vegan milk of choice (oats, cocunut, soy)
  • 2 tbsp of sugar or 4 tbs of erythritol
  • 30 peanut butter 
  • 2 tsp baking powder
  • coconut oil for frying

For the Purple cream:

  • vegan, coconut yoghurt
  • Purple Potatoe Powder from The Organic Labs 
  • optional: swetener of choice

Smash the banana in a bowl.

Add vegan milk, water, sweetener of choice and peanut butter, whisk everything together. 

Mix flour and baking powder in the second bowl. Add dry ingredients to the wet ingredients and mix together.

Heat up coconut oil in a huge Pan on a medium heat. Now put about 2 tbsp of the dough for one pancake into the pan. As soon as you see bubbles on the surface, flip the pancakes (after about 2-3 minutes).

Now mix the vegan yoghurt with Purple Potatoe Powder and swetener of choice.

Build the pancake stack with pancakes and Purple Potatoe cream, putting them alternatyly. 

Finished your pancake stack with melted white chocolate, fruits and little, sugar 

stars.
