Ube White Chocolate Cookies

Makes: 10–12 large cookies
Prep: 15 min + 30 min chilling
Bake: 10–12 min

Ingredients

  • 115 g unsalted butter, softened
  • 100 g light brown sugar
  • 70 g white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 15 g The Organic Labs UBE Powder
  • 180 g plain flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 120 g white chocolate chips/chunks

Method

  1. Cream the base: Beat the softened butter, brown sugar and white sugar until creamy. Mix in the egg and vanilla.
  2. Add the UBE: Add 15 g UBE powder and mix until the dough base is evenly purple.
  3. Make the dough: Add flour, baking soda and salt. Mix just until combined, then fold in most of the white chocolate.
  4. Shape: Chill for about 30 minutes. Scoop into 10–12 balls and place on a parchment-lined baking tray. Press a few extra white chocolate pieces into the tops.
  5. Bake: Bake at 175°C conventional / 160°C fan for approximately 10–12 minutes. The centres should still look slightly soft. Cool on the tray for 5–10 minutes before transferring to a rack.
