About the powder

What is pandan leaf powder?

Pandan is Pandanus amaryllifolius, a tropical shrub of the screwpine family grown for its long, glossy green leaves. It grows across Southeast Asia and in other warm, humid regions, where cooks use the leaves much as vanilla is used in European kitchens: to give desserts, drinks and rice a sweet, rounded fragrance, very often together with coconut.

The colour comes from chlorophyll, the pigment of all green leaves. The aroma is released when the leaf is bruised, heated or dried, and one of its main compounds is the same one behind the scent of jasmine and basmati rice. Fresh leaves keep only briefly, so they are dried and milled into a fine powder that can be weighed, stored and stirred straight into lattes, batters, creams and ice cream.

How to use

How to use pandan leaf powder

The classic: a hot pandan latte in 4 steps.

  1. 1Add 3–5 g pandan powderSift it into a cup first to break up any lumps from storage.
  2. 2Stir to a smooth pasteAdd 1–2 tbsp warm water or milk and whisk until no dry powder is left.
  3. 3Top up with steamed milkMake about 300 ml. Coconut milk tastes most traditional; oat milk suits every day.
  4. 4Sweeten to tasteA little sugar or palm sugar brings the sweet, vanilla-like aroma forward.

How much to use

RecipeAmountTip
Hot latte, 300 ml3–5 gMake a paste with warm milk first
Iced latte, 300 ml3–5 gCold tastes milder: use the top end
Bubble tea, 1 serving3–5 gBlend into the milk base before ice
Cake or sponge, per 250 g flour7.5–15 gAdd a little more liquid
Custard, cream or filling, 500 g15–30 gMix with the sugar first
Ice cream, per 1 kg base20–40 gWhisk with the sugar before the milk

Starting points: coconut and milk carry pandan well, chocolate and coffee cover it. Too much tastes grassy.

Tip: Heat moves the green towards olive and acidity dulls it, so pandan stays greenest in cold drinks, creams and ice cream. Keep lemon juice and yoghurt separate when the colour matters.
