Start your morning with this vibrant pink pitaya smoothie bowl! Thick, creamy and naturally colourful, this refreshing breakfast bowl is made with The Organic Labs Pink Pitaya Powder 70g and topped with fresh fruit, crunchy granola and coconut flakes.
Ingredients
Smoothie Bowl

2 frozen bananas, sliced

150 g frozen strawberries

100 g frozen mango

150 ml coconut milk or almond milk

2 tbsp Pink Pitaya Powder 70g

1 tsp honey or maple syrup (optional)
Toppings

1 fresh banana, sliced
-
4 fresh strawberries, sliced

50 g fresh blueberries
-
4 tbsp granola
-
2 tbsp coconut flakes or shredded coconut
Instructions
1. Prepare the frozen fruit
Place the frozen bananas, strawberries and mango into a high-speed blender or food processor.
2. Add the pink pitaya powder
Add the Pink Pitaya Powder, coconut milk and optional honey or maple syrup.
3. Blend until creamy
Blend until thick, smooth and creamy. Stop occasionally to scrape down the sides. Add a small splash of milk only if necessary. The mixture should be thick enough to eat with a spoon.
4. Pour into bowls
Divide the pink pitaya smoothie mixture evenly between two serving bowls.
5. Add the toppings
Arrange the sliced banana, strawberries, blueberries, granola and coconut flakes in neat rows over the smoothie bowls.
6. Serve immediately

Recipe Tip
For an extra-thick smoothie bowl, use fully frozen fruit and add the milk gradually. For a more intense natural pink colour, add another teaspoon of pink pitaya powder.
