Ube Lava Cake Recipe
Ingredients
For approximately 4 individual cakes:
- 100 g white chocolate
- 80 g unsalted butter
- 2 eggs
- 2 egg yolks
- 50 g sugar
- 40 g plain flour
- 15–20 g Ube Purple Yam Powder
- 1–2 tbsp milk, if required for consistency
- Pinch of salt
- Butter for greasing the moulds
How to Make Ube Lava Cake
Preheat the oven to 200°C.
Melt the white chocolate and butter together gently until smooth.
In a separate bowl, whisk the eggs, egg yolks and sugar until combined. Add the melted chocolate mixture and mix well.
Sift in the flour, Ube powder and salt. Fold everything together until you have a smooth purple batter. If the mixture is particularly thick, add a small amount of milk.
Grease four individual ramekins or pudding moulds and divide the mixture evenly between them.
Bake for approximately 8–11 minutes. The outside should be set while the centre remains soft.
Allow the cakes to rest for around one minute before carefully turning them onto plates.
Serve immediately while the Ube centre is still warm and molten.
Tips for the Perfect Molten Centre
The most important part is the baking time. A difference of only one or two minutes can change the centre from molten to completely baked.
For consistent results, test one cake first and adjust the baking time for your particular oven and mould size.
