About the powder

What is strawberry powder?

Strawberry powder is the garden strawberry, Fragaria × ananassa, in dry form. The garden strawberry is a hybrid of two wild American species, first bred in France in the 18th century, and is now grown in temperate regions around the world, including much of Europe. Its red colour comes from anthocyanins, natural pigments also found in raspberries and blackcurrants.

Fresh strawberries are mostly water, which makes them hard to use in frostings, chocolate or dry mixes. Freeze-dried and milled, the fruit adds strawberry flavour and a pink colour without the extra liquid, so buttercream stays firm and macaron shells stay dry.

How to use

How to use strawberry powder

The classic: a strawberry milkshake in 4 steps.

  1. 1Pour in cold milk300 ml cold milk or a plant drink in the blender.
  2. 2Add 1–2 tbsp strawberry powder1 tbsp for a light flavour, 2 tbsp for a stronger strawberry taste and deeper pink.
  3. 3Add ice cream or banana2 scoops of vanilla ice cream, or 1 frozen banana for a lighter shake.
  4. 4Blend and serveBlend until smooth and frothy. Taste, and add a little sugar or honey if you like it sweeter.

How much to use

RecipeAmountTip
Smoothie or smoothie bowl1–2 tbspBlend with frozen fruit
Milkshake, 300 ml1–2 tbspBlend with milk and ice cream
Strawberry milk, 300 ml1–2 tbspWhisk into a little milk first
Yoghurt or overnight oats, 1 bowl1–2 tspStir in and leave for 5 minutes
Cake batter, per 200 g flour2–3 tbspSift in with the flour
Buttercream or filling, 200 g1–2 tbspSift with the icing sugar
Ice cream, per 500 ml base3–4 tbspBlend with the sugar first

Starting points: flavour and shade depend on the base and recipe. Add a little more for a stronger taste.

Tip: Sift the powder before use so it mixes in without lumps. Baking soda and long baking dull the pink, so for the brightest colour use it in frostings, cream, drinks and ice cream.

How much strawberry powder should I use?

Start with 1–2 tbsp per 300 ml milkshake or strawberry milk, 1–2 tsp per bowl of yoghurt, 2–3 tbsp per 200 g flour, 1–2 tbsp per 200 g buttercream and 3–4 tbsp per 500 ml ice cream base, then adjust to taste.

Can strawberry powder replace fresh strawberries?

In many recipes, yes. Powder gives strawberry flavour and colour without the water, so it suits frostings, macarons, chocolate, milk drinks and ice cream. Fresh fruit is still best where you want slices, juiciness and shape on the plate.

Can strawberry powder be used in baking?

Yes. Sift 2–3 tbsp per 200 g flour in with the dry ingredients. Baking soda and long baking dull the pink, so the crumb turns a soft pink-beige; for the strongest colour, use it in the frosting or filling.

How much strawberry powder goes into ice cream?

Start with 3–4 tbsp per 500 ml of ice cream base, blended with the sugar first, then adjust for flavour and shade. Judge the result on the frozen product, not the liquid mix, because cold softens flavour.

How do cafés make a strawberry latte with strawberry powder?

Whisk 1–2 tbsp of strawberry powder into a splash of milk until smooth, sweeten to taste and top up with gently steamed or cold milk to 300 ml. For busy service, prepare a strawberry base before opening.

What does strawberry powder taste like?

Sweet and fruity with a light tartness, like concentrated strawberry. You taste it clearly in drinks, yoghurt and frostings; in baked sponges the flavour is milder. Vanilla, cream, white chocolate and lemon all bring it forward.
